100% A1 Grade

the only grade that leaves the estate

Every lot is screen-graded and cupped before it goes anywhere near a freeze-drier. If it does not make A1, it does not go in a Koffie Collina jar.

from bean to cup

  1. 01
    Extended harvesting process

    Extended harvesting

Cherries are picked in four passes over six weeks, so only fully ripe fruit leaves the slope. 140 pickers work the estate by hand.

  2. 02
    Pulping and parchment process

    Pulping & parchment

Pulped within four hours of picking, then rested under parchment on raised beds until the moisture reads exactly right.

  3. 03
    Grading and profiling process

    Grading & profiling

Every lot is screen-graded and cupped. Only A1 grade beans continue; the rest go back to the estate blend.

  4. 04
    Sublimation process

    Sublimation

Brewed coffee is frozen to −40 °C and the ice drawn off under vacuum. Nothing is heated, so nothing aromatic is lost.
